- Preparation: Wash the tomatoes thoroughly and pat them dry. This ensures no moisture or dirt remains on the surface.
- Slicing: Cut the tomatoes into 1/4-inch thick slices. Keeping the slices uniform helps them dry evenly.
- Arranging on a Tray: Lay the tomato slices flat on a tray, making sure they do not overlap.
- Sun-Drying: Place the tray in direct sunlight for at least seven hours a day. The drying process usually takes 5-7 days, depending on the thickness of the slices and the intensity of the sun.
- Covering for Protection: If necessary, cover the tray with a muslin cloth to keep insects and dust away.
- Daily Routine: Ideally, the tomatoes should be placed outside around 9 AM and taken in by 4 PM. If the sun is weak, the drying process might take longer, and there is a risk of mould forming.
- Storage: Once the tomatoes are completely dried, store them in an airtight container. Properly dried tomatoes can last for months.
- Rehydration: Before using, soak them in hot water for a few minutes to soften them.
